This course will introduce students to ingredients and cooking techniques
not commonly thought of for vegetarian cooking. This class will discuss
and demonstrate examples of combining different grains and cereals with
other ingredients to make complete proteins. Preparations with dairy
products and eggs will be demonstrated, as well as some vegan dishes.
